Well it really isn’t Christmas without obscene amounts of cookies! I love making cookies but a household of two can only eat so many. Tomorrow my work mates will treated to some delicious, warm hugs in the form of spiced orange biscuits. I hope they’re hungry!
Spiced Orange Biscuits
125g butter
100g caster sugar
25g golden syrup
325g plain flour
1 tsp baking soda
Zest of one small orange
2 tsp ground ginger
½ tsp ground cinnamon
2 medium eggs, beaten
Steps
1. Preheat the oven to 160C or 140C for a fan assisted oven. Line two baking trays with baking paper. Put the butter, caster sugar and syrup in a bowl and heat in the microwave until the butter has melted, but don’t allow the mixture to boil. Stir vigorously for a few moments to help dissolve the sugar. Alternatively, melt ingredients together in a small pan on the stove. Let cool.
2. Sift the flour, baking soda, ginger and cinnamon into a mixing bowl. Add the butter mixture and eggs, then mix to make a stiff dough. Wrap in cling film and chill for at least 20 minutes. I left mine for about an hour.
3. Roll out on a floured surface to 4mm thick. Cut out shapes and place on the trays and bake for 10 minutes.
4. Remove from the oven and leave for 5 minutes, then transfer to a wire rack to cool.
Now you decorate and eat them! Yum! I decorated some of mine with royal icing and sprinkles and the rest I sandwiched with homemade raspberry jam. Delicious!
